Ingredients needed for cream of mushroom soup

  • Mushrooms: For this recipe, I recommend using white or brown mushrooms.
  • Onion: Onions are very tasty, but they also contain about 12 grams of net carbs per cup. Don’t forget to measure out the onions.
  • Whipped cream: This ingredient gives the soup a creamy texture. You can increase or decrease the amount as you see fit, but I recommend starting with 1/4 cup for this recipe. Too much cream detracts from the other flavors of the soup.
  • Oil: You can substitute ghee or olive oil.
  • Fresh garlic: You can use a garlic press or a garlic press with a pestle. Garlic has a different flavor when sliced instead of pureed.
  • Fresh oregano: If you can’t find fresh oregano, you can replace it with dried oregano or fresh thyme. I highly recommend using fresh oregano if possible.

Instructions

  1. Fry the vegetables in oil. Put a large pan on medium heat, add the oil. Once melted, add the garlic and onion. Once the onions are golden, add the mushrooms and fresh oregano. Cook for about 2 to 3 minutes.

  1. Cooking the soup. Add the water broth and the beef. Put the stove on high heat and cover the pan. Cook the soup for about 10-15 minutes or until the mushrooms are tender.
  2. Mixing. Use an immersion blender to puree the mushroom soup.
  3. Stir in the cream, salt and pepper.

Tips and variations

  • My main tip for this recipe is to use fresh garlic and oregano if possible. To make a great soup, nothing beats fresh herbs and garlic.
  • You can experiment with different mushrooms for this recipe, but I recommend starting with a white or brown mushroom.

  • Wash and chop the mushrooms.
  • Peel and dice the onion. Measure the onions down to 3/4 cup.
  • Peel and crush the garlic with a garlic press.
  • Rinse the fresh oregano and cut it into small pieces.
  • In a large saucepan over medium heat, add the oil. Once the butter has melted, add the fresh garlic and chopped onions.
  • Once the onions are golden, add the mushrooms and fresh oregano and cook for about 2-3 minutes.
  • Add water and a beef stock cube. Put the stove on high heat and put the lid on.
  • Cook mushrooms for 10 to 15 minutes or until tender.
  • Remove from the fire. Use a hand blender to blend the soup evenly.
  • Add the cream, salt and pepper.

Beef broth can be substituted for beef broth. Replace the broth with 32 ounces of beef stock. Do not add extra water. Dried oregano can be used in place of fresh oregano.
