Supplies and feeds for low-carb grilled cheese:

  • 4 keto slices
  • Cream cheese
  • Assorted Parmesan cheese, you can use shakers here or go crazy with Parmigiano-Reggiano.
  • Whipped cream
  • Mayonnaise
  • Garlic powder
  • Sliced cheddar, use extra sharp for a richer flavor, use a milder cheddar for a milder flavor. I used medium cheddar in today’s recipe, I wanted the other cheeses to shine too!
  • Sliced provolone cheese, I like to use the unsmoked kind.

For Cheddar Keto Bread

  • Big balls.
  • Tartarus
  • unsalted butter
  • Finely ground almond flour
  • Bicarbonate of soda
  • Grated cheddar cheese, use the fineness you like.

I love that this recipe uses simple, everyday ingredients. Even if you don’t do keto very often, you should have almost everything on hand. This is one of those recipes where you can take the initiative and make it exactly the way you like it.

You don’t like provolone? Replace with sliced peppers.

Don’t like the idea of covering the outside of the bread with mayonnaise? No problem, burn it in melted butter!

I recommend adding mayonnaise. This makes the outside super crispy and very tasty!

How do you make a keto grilled cheese?

I highly recommend making our cheddar keto bread with your keto grilled cheese, but with pre-made keto bread!

Cheddar Keto Bread Making

  1. In two large bowls, beat the egg yolks and egg whites.
  2. Using a hand mixer, beat the egg whites with the cream of tartar. The use of a scale ensures that the hardness peaks remain hard.
  3. Beat the egg whites until they form stiff peaks. Firm peaks means that when you take the beaters and turn them over, the egg white stays upright without spilling out. It also leaves a pattern in the whipped egg whites that stays and doesn’t melt in the bowl. Let it out.
  4. Add the melted and cooled butter, almond flour and baking powder to the bowl with the egg yolks. With the same hand mixer, no cleaning required! Mix on medium speed until everything is incorporated.
  5. Using a rubber spatula, fold half of the beaten egg whites into the batter. It may seem impossible, but everything will be fine. Fold in the rest of the whipped egg whites.
  6. Add one cup of grated cheddar to the mixture and stir in. Pour the mixture into a loaf pan lined with baking paper. Sprinkle the rest of the cheese on top.

  1. Place in the preheated oven and bake for 30 minutes, until the top is light brown and a toothpick inserted in the center comes out clean. Let the bread cool slightly in the pan for 10 minutes, then let it cool completely on a wire rack for at least 30 minutes before slicing.

How to make grilled keto cheese

  1. In a small bowl, mix the softened cream cheese with the Parmesan cheese and heavy cream. I just use a fork to mix everything until it’s smooth.
  2. Put the mayonnaise and garlic powder in a separate bowl and stir together.
  3. Take four slices of keto bread and place them on a cutting board.
  4. Place a slice of provolone cheese on one half of the bread and a slice of cheddar cheese on the other. Spread half of the cream cheese mixture on one side of the bread. Place the other half of the sandwich on top.

  1. Brush the top of the sandwiches with ¼ of the mayonnaise and set aside.

  1. Wait until the mayonnaise is hot in a skillet over medium-high heat and add the mayonnaise sandwich to the bottom of the pan. Brush the top of the sandwiches evenly with the remaining mayonnaise mixture.

  1. Cover and wait until the bottom bun is browned and the cheese begins to melt, about 3-5 minutes.
  2. Turn over, cover and let the other side of the grilled cheese brown. There are three to five minutes left. The sandwiches are ready when the cheese is melted and browned on both sides.
  3. Let cool slightly before serving, the filling will be very hot!

Tips and tricks for gentle cooking

For Cheddar Keto Bread

  • It seems to take forever to whisk egg whites into a ball. It will take time, but stay tuned!
  • If your dough is a little lumpy, that’s not a problem. It will still be perfectly cooked.
  • This recipe makes 14 to 18 slices, depending on the thickness of the slices.

For grilled cheese keto

  • Fresh grilled cheese? I know it sounds weird. Trust me, the end result is so perfect.
  • A touch of garlic mayonnaise on the outside is just that little bit extra that makes this keto grilled cheese extra special. The bread gets very crispy, but still has that moist, juicy feel you know from grilled cheese with butter. In addition, the addition of garlic powder adds an extra dimension of flavor that is needed.
  • If you REALLY want that buttery outer crust, I suggest mixing a mayonnaise mixture, half mayonnaise and half melted butter, then stirring in the garlic powder. Spread the bread in the same way.
  • When you grill cheese, you have to do it slowly. That’s why I suggest using a pan that heats only at medium temperature. Too high a temperature leads to a burnt exterior and unmelted cheese.

You can also adapt this recipe to your taste. I think a combination of provolone, cheddar, parmesan and cream cheese is a winning combination.

Maybe we can start with this recipe and then come up with something! Use a cheese that melts well, such as Gruyère, American or even Colby Jack.

Can I eat grilled cheese if I’m on a diet?

Yes! You can eat grilled cheese while on a ketogenic diet.

Substituting keto bread or even cauliflower steaks for the bread makes for an epic low-carb grilled cheese!

What is the best cheese for a keto grilled cheese?

You need to use cheese that melts well. I also think you should use cheeses that hold together well.

As in this recipe, we had a mixture of hard and fresh cheeses. The result is a very sticky grilled cheese.

I don’t recommend using just melted cream cheese, because you’ll end up with a sticky cheese sandwich. It will still taste great, but you won’t get the epic stringy cheese you expect from a good grilled cheese.

How do you store keto grilled cheese?

I suggest making these low-carb grilled cheese sandwiches. However, if for some reason you have leftovers, store them in an airtight container in the refrigerator for up to 3 days.

To reheat, place the pan over low heat, add the rolls and cook until well done.

I don’t recommend freezing leftovers.

  • Preheat the oven to 375°F. Separate the yolks from the whites by placing them in separate large bowls.
  • Add the cream of tartar and the egg whites to the bowl. Beat with a hand mixer until stiff peaks form, set aside.
  • Add the butter, almond flour and baking powder to the bowl with the egg yolks. Shuffle. Using a rubber spatula, fold in half of the whipped egg whites. Fold in the remaining beaten egg whites. Stir in 1 cup grated cheddar cheese.
  • Pour the mixture into the parchment-lined loaf pan. Top with the remaining grated cheddar cheese. Bake 30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean. Let cool for 10 minutes in the loaf pan, then place on a wire rack and let cool for at least 30 minutes before slicing.

For grilled cheese keto

  • Put the cream cheese, Parmesan cheese and cream in a small bowl. Puree with a fork until smooth. Let it out.
  • In a small bowl, combine mayonnaise and garlic powder; set aside.
  • Place the bread slices on a clean work surface. Place a slice of cheddar cheese on one side of the sandwich, a slice of provolone cheese on the other side. Divide the cream cheese mixture evenly between the two halves. The top is on the other side of the sandwich.
  • Spread each sandwich with ¼ of the mayonnaise. Place the sandwiches, mayonnaise side down, in a preheated skillet over medium heat. Spread each sandwich with the remaining mayonnaise. Attach the cover without touching the top. Bake for 3-5 minutes until the bottom is golden brown and the cheese begins to melt. Turn over, cover and bake for another 3-5 minutes, until the bottom is browned and the cheese is melted. Allow to cool slightly before serving.
