It’s the best way to satisfy your sweet tooth, especially at a time when store shelves are filled with desserts and social media is full of photos of homemade pastries.

These sea cookies not only bite your mouth with delicious chocolate, but are topped with sugar-free frosting and even more chocolate.

Keto Brownie Bites Ingredients

If you’ve ever baked, you probably have all these ingredients on hand! Here’s what you need to make low-carb brownies.

  • Unsweetened cocoa – Make sure it is unsweetened. Dark cocoa for baking would also be surprisingly delicious in this recipe.
  • Baking soda
  • Almond flour – use almond flour, not almond meal. Almond flour gives cakes a grainy taste.
  • Eggs
  • Butter – use unsalted butter. If you use salted butter, use less salt in the recipe.
  • Keto sweetener – use a granular sweetener for this recipe or a few drops of sweetener.
  • ChocZero Chocolate Chip – Use your favorite sugar-free chocolate chips. ChocZero chocolate chips have a very rich taste without the carbohydrates.
  • Xanthan Gum – This ingredient helps the ingredients stick together.
  • Vanilla extract
  • Salt

There are only a few different steps to making this brownie recipe. If you’ve already made cookies or brownies, you can make them too!

Simply combine all the ingredients for the muffin dough in a bowl and blend in a blender.

I like to use a stainless steel ice cream scoop to measure the portions of these cupcakes. Especially when I make muffins and cupcakes and brownies. It allows you to get the perfect amount of dough and reduces the mess when you try to use two spoons.

Once they’re cooked, you can add low-carb toppings. Even if they are optional, they elevate these cupcakes to the status of out-of-this-world objects!

What to serve with Low Carbon Pie Slices

Since each slice of pie (regular) contains only 2 grams of net carbs, you can enjoy it at breakfast and even at lunch.

I prefer to pair an almond flour cake with a cup of coffee or hot tea. In the fall, I like to nibble on a Starbucks caramel apple and spice brownie.

What is the best kind of muffin for baking cakes?

I have found that silicone cupcake pans prevent my cakes from sticking, especially if I grease them first.

If using a metal muffin tin, make sure it is well greased or use muffin cups.

Use a regular muffin tin for larger portions! But my nutrition information is for a mini muffin yolk. Taking large bites of brownies increases the net amount of carbs in each brownie.

What are the best sugar free chocolate chips to add to this brownie recipe?

For this particular recipe, I used sugar-free ChocZero chocolate chips. The taste of chocolate is not only suitable:

  • Contains only 1g net carbs per serving
  • Sweetened with monk fruit
  • Gluten-free
  • Soy free
  • Perfect for cooking food

It is one of my favorite brands when baking with chocolate!

How long do you let the cakes cool before adding additions?

Depends on where you store it. If you try to cool them on a hot stove, they will take much longer to cool.

Make sure they have cooled to room temperature before adding the frosting, glaze or topping. It takes 30 minutes to an hour.

What is the keto for almond flour bites?

That’s the best part! So many ideas. I chose a very quick and easy way to insert my brownie pieces.

I melted sugar-free white chocolate and filled the brownies with it. Then I added ChocZero mint chocolate candies on top.

The combination of mint and chocolate gives these brownie bites a decadent holiday flavor!

You can also add a keto chocolate glaze instead of melted white chocolate chips.

Another easy way to top these bites of brownies is to sprinkle them with a sugar-free sweetener.

How do you store keto pieces?

Just like regular brownies, you can store these keto almond flour pieces in an airtight container at room temperature. They keep this up for about a week.

You can also store them in a sealed bag or container in the refrigerator. They stay fresh for up to 10 days in the fridge.

Can you freeze the pies?

Yes, brownies are a great dessert to freeze and store for later. Always frost cakes before adding additives.

Here’s how to freeze keto brownies (so they don’t turn into a giant block of chocolate ice cream):

  1. Place the brownie bites in a single layer on a baking sheet.
  2. Place the hot plate in the freezer overnight.
  3. Once well frozen, place the brownie pieces in an airtight plastic freezer bag.

That’s it!

They stay fresh in the freezer for up to 3 months. And when you’re ready to eat them again, thaw them in the fridge overnight.

Why do I need to mix the ingredients for the dough?

It is very important to mix all the ingredients in the muffin dough. This ensures perfect coordination between them.

It’s also helpful that almond flour mixes with everything else, so everything tastes good.

If you don’t have a blender, you can use a stick blender, but I recommend investing in one. You will also use it for many other recipes.

What is the fill level of the muffin tin?

This almond flour brownie recipe doesn’t develop as much as the others when baking, so you don’t have to worry about overflowing the muffin pan.

On the other hand, you don’t want them to be so big that the cakes are baked on top.

I like to fill each brownie ¾ full. If you use a muffin spoon, this equals one muffin spoon per muffin tin.

The advantage of using a cookie portioner is that it helps you to portion out the same amount of dough each time. In this way, all cakes are baked at the same speed.

For regular muffin tins, you can use a scoop of ice cream instead.

Instructions

  • Preheat oven to 350°F. Grease 24 mini muffin cups.
  • Mix all ingredients in a medium bowl until well blended.
  • Divide the dough evenly between the greased mini muffin cups.
  • Bake for 12 to 15 minutes or until desired doneness is achieved.
  • Let the brownie bites cool in the pan on a rack for 10-15 minutes, then remove them from the pan and let them cool completely.
  • Place a teaspoon of melted white chocolate on each bite, at ½ if desired, and sprinkle with chopped mint bark. Allow the chocolate to harden before serving.

Notes

If you don’t use xanthan gum, bites can be refrigerated overnight until dispersed.
The dough can also be baked in an 8×8 inch pan for regular square almond flour cakes.
Cakes can be prepared in advance and frozen for up to 3 months without refilling.
