These decadent blondies with keto-rum butter are perfectly chewy and filled with nuts.  Slightly sweet, rich in butter and with a subtle hint of rum, these are the best keto blondes I’ve ever had!

I had other keto recipes to post here first, but I made these Keto Rum Butter Blondies last week and I couldn’t wait to share them!

I love a good blonde, but the keto blondes I’ve had in the past have never really seduced me. Honestly, I didn’t even know if I could get this delicious butter by chewing it with keto-friendly ingredients – so I didn’t even try for a long time.

I finally agreed, and I’m happy to say that these Keto Butter Rum Blondies are everything you’ve been missing in a recipe for Keto Butter Rum Blondies – and more!

Delicious with a cup of coffee in the morning or to end your dinner in style. These low carb blondies are so good that I had to cut them in half and then freeze them to avoid eating them all in a day or two.

Blonde Rum Keto Oil Recipe Notes

These keto oil blondies do not contain rum, although you can use the real thing if you like. I decided to use the rum/flavor because it gave me the flavor I wanted, without adding much extra liquid to the pasta.  I used a McCormick brand I found in the baking section.

I used Lakanto Golden as the sweetener, which gives these keto blondies that warm, rich flavor you can’t get with a white sweetener.  Swerve brown, or some other alternative brown sugar, should work the same way – although I can’t guarantee the exact results I obtained unless you use Lakanto (which is neither sponsored nor affiliated with Lakanto anyway, which is exactly what I used).

Finally, these keto blondies use psyllium husk powder, which gives them an authentic chewy texture.  You can leave it out if you want, but the result will be heavier and thinner, closer to a biscuit than a blonde.  It’s not necessarily a bad thing, but it’s not nearly as good as trying a recipe when it’s written!

1/2 cup melted butter

1/2 teaspoon baking powder

1/4 teaspoon kosher salt

1 large egg

1 teaspoon vanilla extract

1 teaspoon rum extract

1/3 cup chopped nuts (or pecans)


  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Combine all ingredients, except nuts, in a large bowl.
  3. Stir them with a wooden spoon until they come together – don’t over mix or the mixture will harden.
  4. Stir in the nuts.
  5. Line a 9 x 9 square pan with parchment paper (this makes them easier to remove).
  6. Pour the dough into the pan and spread it evenly around the edges.
  7. Bake in the oven for 20 minutes.
  8. Remove and refrigerate for 30 minutes before cutting.
  9. Store in an airtight container in the refrigerator for up to one week or in the freezer for up to three months.
