This super easy Keto Cheesy Ranch Chicken & Rice is full of flavor and texture and the Cheesy Ranch tastes amazing! A delicious keto chicken dish your family will ask for again and again!

 

I’ll be honest and admit that while the chicken is delicious – crispy skin, tender, juicy meat, blah, blah, blah…. the star of this dish is the ranch-cheesey cauliflower rice.

It’s hard to believe I know. But it’s true! Instead of calling it Keto Cheese Rice with Chicken and Ranch Rice, I probably should have called it Keto Cheese Rice with Ranch Cauliflower – with chicken.

 

The top of this cauliflower and keto cheese rice gets a little crunchy and chewy, while the inside is soft and chewy with a strong ranch flavor. It’s delicious – it’s the best comfort food.

So much so that I scraped off all the leftover cauliflower rice that was on the bottom of the fried chicken in the fridge and reheated it for lunch the next day, not bothering to add the chicken.

I ended up eating chicken too, but it was really sad when the cauliflower rice disappeared from the ranch.

And don’t get me wrong, the crispy ranch chicken was great too – but not as good as this cheesy cauliflower rice. You can certainly do it yourself, but cooking the chicken in the rice adds extra flavor, so I’m not sure if it’s all that good if the chicken juice hasn’t come through properly.

Let’s talk about how easy this Keto Cheese Ranch Chicken with Rice is….

I used a traditional seasoning from Hidden Valley Ranch for this Keto Cheese Ranch Rice Chicken (not sponsored, just what I used) and it came out great. If you don’t have access to a packaged ranch, or if you don’t want to use one, you can make your own ranch ranch at home.

There are many options on the internet, here is a homemade ranch herb from Low Carb Maven that appeared in a Google search. I haven’t done it myself yet, so I can’t vouch for its quality. It looks legitimate. Let us know if you try it.

Times are tough, and if you’re like me, a simple, cheap dinner that no one will miss is the only thing keeping you going. This ranch rice with cauliflower and keto cheese is definitely going with me, and I’d love for you to try it and report back to me!

If you’re not on keto, you can do it with regular rice instead of cauliflower rice. Replace the cauliflower with 2 cups of rice and add 3 3/4 cups of water. Cook as directed or until the rice has absorbed all the liquid and the chicken is cooked through.

Ingredients

  • 2 tablespoons melted butter
  • 4 ounces soft cream cheese
  • 1 packet of ranch dressing (about 3 tablespoons)
  • 1/2 cup grated cheddar cheese
  • 6 cups rice cauliflower
  • 6 chicken legs (drumsticks and/or thighs)
  • 1 teaspoon coarse kosher salt (or 1/2 teaspoon table salt)
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375 degrees.
  2. Combine butter, cream cheese and 2 tablespoons ranch seasoning in a medium bowl and microwave for 1 minute.  Shake until blended.
  3. Add the cauliflower rice (or rice and water) and grated cheese and mix well.
  4. Transfer the mixture to a 9 x 13 baking dish or casserole and spread evenly over the surface of the dish.
  5. Rub the remaining spices over the chicken pieces and place them on top of the rice.
  6. Season with salt and pepper and drizzle with olive oil.
  7. Cook for 45 minutes or until chicken is cooked through and skin is golden brown, without removing the lid.

Estimated amount of net carbohydrate per serving = 4g.
