Keto Instant Potted Lasagna Recipe

I’ve been trying to make cooking easier lately. I wanted to have a keto lasagna, but I didn’t want to take the time to make a meatball or turn on the oven.

I find that using my slow cooker and instant pot makes cooking very easy.

Instant Pot is a fairly new gadget for me, and I’m still learning how to best use it. But it quickly became one of my favorite kitchen appliances.

The versatility of the Instant Pot allowed me to say goodbye to my steamer and rice cooker! It’s also a crockpot, but I keep my crockpot because you can never have enough.

This Instant Pot Lasagna recipe is adapted from my Spaghetti Squash Lasagna recipe. But I’ve decided to give up vegetarian noodles. I think I could use some zucchini diapers to hold things together. But I didn’t bother.

That’s why I call this noodle-free lasagna recipe. There is no NO, true or false.

My traditional lasagna recipe uses a ricotta-based filling. Some people like to use cottage cheese, but I prefer the taste of ricotta. But both work, so use what you like best.

How long should lasagna be pressed?

The advantage of making lasagna in the pressure cooker is that everything happens in the pot! You brown the ground beef, fry the onions and heat it up!

Even with the second method, which involves making the lasagna without pasta and layering the ingredients, they still combine in a single pot!

Once all the ingredients are combined, press the button to cook the lasagna on HIGH for 9 minutes. It really is faster than in the oven!

Can I cook frozen hamburger meat in an instant pot?

In one of the emails I often receive from my readers, I’m asked if you can cook hamburger meat in Instant Pot straight from the freezer if you’re making lasagna without pasta. The answer is YES!

Here’s how to make a frozen hamburger in the instant pot:

  1. Place the frozen hamburger patty on a plate.
  2. Add 1 cup of water to the Instant Pot basket.
  3. Then place your burger on a plate in the Instant Pot basket.
  4. Slide the cover with the breather valve upwards.
  5. Select MANUAL MODE for 15 minutes.
  6. Allow manual release and then perform a quick release.
  7. Your burger is defrosted, partially seared and ready to eat!

If you want ground beef to be fully cooked, it should be pressure cooked for at least 20 minutes. But I think it’s a little overcooked because I end up baking it with onions and garlic for lasagna.

You can even cook the meat in sauce to save time!

Tips for cooking lasagna under pressure – perfect every time

  • It is best to cover the lasagna with aluminum foil while it cooks in the instant pot. This prevents condensation from dripping onto the cheese.
  • If you want, you can leave the top layer of cheese on during cooking. If the time has expired, simply add the cheese after the pressure has stopped. Then put the lid back on and let the heat of the heating cycle melt the cheese.

Anyway, this is a super easy recipe made in the Instant Pot. And that only ruins one pan, because the meat can be cooked directly in the pan!

I think you’re going to love this easy to make instant lasagna. It’s like a baked lasagna. And it skips the pasta, saving carbs that are useless to carb eaters!

My two different methods of cooking lasagna in the instant pot

I experimented with two ways to make Instant Pot Noodle Free Lasagna to see if one was better, but both methods made a great dish, so you can choose the one you like best.

Method 1: Combine all ingredients

The first method is to put all the ingredients directly into the pressure cooker.

Some readers saw their food burning. This may be due to the use of a high temperature cooking method. Make sure the screen is set to the NORMAL operation level.

Method 2: Ingredient layer

The second method is to put the ingredients in a round saucepan first. If using a springform pan, wrap it with aluminum foil on the bottom to prevent moisture from reaching the bottom of the lasagna, which would cause the mixture to become soggy.

Another tip for stacking lasagna is to place it on a wire rack and make a loop of aluminum foil so it can be easily removed after cooking!

How to make instant lasagna in a pan without a saucepan

Why waste two pots when you can get away with one? If this is how you feel, you may prefer to cook the lasagna directly in the Instant Pot.

Here’s how to make lasagna in l’Instant Pot without a pan:

  1. Sauté the ground beef with a little garlic and onion.
  2. While the meat is browning, mix the ricotta (or cottage cheese) with the parmesan and egg in a small bowl.
  3. Drain the fat and remove the meat mixture from the instant pot.
  4. In a medium bowl, mix the meat with the marinara sauce (reserving ½ cup).
  5. Add half of the meat mixture to the instant pot.
  6. Cover the meat mixture with the cheese mixture and mozzarella slices and repeat the layers.
  7. Sprinkle reserved meat sauce on top. (This prevents the top layer of the cheese from dripping off with condensation).
  8. Close the lid and cook under high pressure for 9 minutes.
  9. Drain the steam, remove the lid and serve.

Pay attention: Lasagna can burn using this method if there is not enough liquid in the sauce, which is necessary when pressure cooking. So, if you want to make sure nothing burns, use a method that involves a pressure cooker.

To prepare instant lasagna in a pan according to cooking mode.

Using a small pot to match your Instant Pot is probably the most common way to cook lasagna in the pressure cooker. The ingredients and cooking time are the same, but they are all arranged in a pan big enough to fit in the instant pot.

The pan is then placed on a grid above the water. This method also prevents the lasagna from burning, as there must be enough water to pressure cook the lasagna.

Here’s how to make lasagna in the pressure cooker using a springform pan (or any pan that fits in the Instant Pot) :

  1. The roasted meat is sautéed with garlic and onions in the sauce.
  2. While the meat is browning, mix the ricotta (or cottage cheese) with the parmesan and egg in a small bowl.
  3. Once the ground beef is browned, drain the fat and remove the meat mixture from the instant pot.
  4. Mix the meat mixture with the marinara in a medium bowl, reserving half a cup.
  5. Then, using a round baking dish that fits your instant casserole (like a springform pan with aluminum foil to catch the fat), spread half the lasagna, mozzarella, and ricotta cheese mixture and repeat the process a second time until there are no ingredients left. Garnish with half a cube of the reserved marinara sauce.
  6. Pour 1 cup of water into the instant pot and place the pot holder in the sling.
  7. Place the bowl in the instant pot on the counter.
  8. Close the lid and cook under high pressure for 9 minutes.
  9. Drain the steam, remove the lid and serve.

Recipe variations for making Noodle-Free Lasagna in the Instant Pot

All recipes are used as a basis. Of course, you can also make the lasagna without pasta, as described in the recipe below. But if you need to increase the amount of protein, decrease the amount of carbs per day, or if you want more vegetables, change anyway!

Here are some ideas you might want to try:

  • Add a cup or two of fresh spinach to increase fiber for the day.
  • Add zucchini or eggplant slices to add even more vegetables to your noodle-free lasagna.
  • Do you have any fresh tomatoes? Dice it up and throw it in the jar to keep it fresh!
  • Speaking of fresh: If you have some fresh herbs on hand, like basil, chop up a tablespoon or two and sprinkle them over the cheese once the lasagna is cooked, to complete the dish! The greenery on the cheese is always my favorite way to put a dish together and make it look pretty!
  • If you like cottage cheese and have some on hand, you can also use ricotta instead of cottage cheese!

  • Attach the lid, close the valve and boil under high pressure for 9 minutes.
  • Drain the steam, remove the lid and serve.

Notes

As many commenters have pointed out that lasagna burns in the pan, the recipe has changed from cooking directly in the pan to using an oven dish.
However, burns can occur if there is not enough liquid in the pot when pressure cooking. So the water sauce is what you need to keep the lasagna from burning if you don’t want to use the split-dish method. The extra sauce should also not burn if you want to cook directly in the pan.
