If you want to make this recipe fast, try a roast chicken from the store. It’s easy to shred, tastes great when you buy it fresh, and can also drastically reduce cooking time. Joanie’s recipe is based on that assumption. Pre-cooked chicken is a good choice. Joanie likes to use breast meat for this recipe, although thighs work just as well. A mixture of the two would also be perfect for this recipe. The only advice would be to make sure your chicken is at room temperature. Cold pre-cooked chicken can become tough when you reheat it.
Alfredo sauce contains even butter, heavy cream and parmesan. Some people add Asiago or Monterey Jack to spice up their recipes. They would work, but Joanie wants to keep this tradition alive. Parmesan cheese adds a special touch to the sauce. Remember to leave the cheeses in the bag or box. They often contain preservatives and additives to keep them from sticking, which doesn’t melt well. Gather your Parmesan cheese to choose the tastiest ingredient. You can double the sauce recipe if you serve it on zoodles. Another good idea would be to serve this recipe on zoodles. Tips for Preparing Chicken Alfredo Keto Broccoli Alfredo
In many recipes, broccoli florets are steamed or briefly blanched in water. Joanie uses her microwave to cook the broccoli and uses no water. It comes out perfect, with a rich green color every time and all the nutrients in place. It only takes two minutes to cook the florets. You don’t need to roast the broccoli. It also reduces cooking time and mess. We recommend using fresh (not packed or frozen) broccoli.
The garlic will cook quickly over medium heat in the melted butter. Quickly remove from the heat before adding the heavy cream. Also, stir the cream mixture constantly until the spices are added. It will thicken by the end of the process if the heat is lower. When the sauce coats the back of a spoon, remove the sauce from the heat and add the parmesan, chicken and broccoli. Mix everything together and let cook covered for 30 minutes. Perfect every time!

Keto Chicken Broccoli Alfredo has so much flavor and all with less than 5 grams of carbs! It’s ready to serve in just over half an hour. And it’s all prepared in the same Dutch oven and cooked to perfection. Joanie’s recipe is the perfect “comfort food” and a treat for the heart. Try it today!
- 12 ounces broccoli florets (fresh)
- 3 cups chicken breast (grated)
- 3 tablespoons butter
- 1 1/2 tablespoons garlic (chopped)
- 1 1/2 cups whipped cream
- 1 teaspoon Creole seasoning
- 1/2 cup parmesan cheese (freshly grated)
- 1/2 teaspoon sea salt
- 1/4 teaspoon pepper
- Prepare 12 ounces of fresh broccoli florets.
- Slice the cooked chicken breasts and set aside three cups.
- Preheat the oven to 350 degrees F. Steam the broccoli florets in the microwave for 2 minutes. Set aside.
- Heat a casserole over medium-high heat, add oil, chop garlic and sauté for 1 minute.
- Turn the heat to medium-high and add the cream, stir and simmer for 5 minutes. Toward the end of the simmer, when the sauce has thickened, add the Creole seasoning.
- Remove from heat and stir in the grated Parmesan cheese. Add the chicken and cooked broccoli florets and stir well. Cover and cook for 30 minutes. Serve hot.
- You can add red pepper flakes or your favorite hot sauce for extra heat before cooking.
- For variety, add sliced mushrooms before the garlic and cook until golden brown and softened, about 3 minutes.
