This low-carb spinach gnocchi recipe is one of the first I immediately thought of when I tried it.

Since you may have seen my original keto gnocchi recipe where I tried to explain everything to make them as good as possible, I don’t think I need to repeat it here.
So I go straight to the perfect easy recipe that not only looks pretty, but is also determined in texture and taste.
Spinach Gnocchi
I combined fresh spinach leaves with garlic for the perfect flavor.
Sour cream is added to give the dish an acidity and bring out the bright green color of the spinach.
I sprinkled dried turmeric on top, not only for the health of this perfect keto gnocchi dish, but also for the color combination.

STEP-BY-STEP INSTRUCTIONS FOR SPINACH GNOCCHI RECIPE
First step: Keto Gnocchi
Cook the gnocchi the day before or in advance.
Our Keto gnocchi recipe is so perfect that it can be prepared ahead of time and stored in the refrigerator or frozen for days.
Whatever method you choose, make sure they are prepared according to our recipe.
Full instructions and detailed steps I have prepared in Home Keto Gnocchi post which you can refer to.
Step 2: Prepare the ingredients
Prepare all the ingredients.
For spinach, use young, fresh leaves as much as possible, as they have the best sweet taste of fresh spinach.
I used sour cream to make the dish more acidic and to preserve the beautiful green color of the spinach leaves.
You can also use Greek yogurt if you don’t have sour cream.
Third step: cooking Nyokki
Prepare the gnocchi for cooking.
Add a little oil and salt to a pan of boiling water and cook the gnocchi for about five minutes, depending on their size.
Remove them with a sieve and set aside.
Fourth step: garlic and oil
Sauté the garlic with the oil of your choice in a pan until the garlic is golden brown.
Step 5: Fresh spinach leaves
Once the garlic is sautéed golden, add the fresh spinach leaves and sauté over medium heat.
You can cover the pan with a lid to steam the spinach some more.
As you can see in our video and as we all know, spinach leaf count is generally decreasing.
You don’t have to worry about spinach leaves taking longer to cook, because the fresher the spinach, the healthier it is and the more beautiful the color.
Sixth step: the sour cream
Once you have seen that the spinach leaves have steamed and shrunk, you can add the sour cream and mix everything together.
By using sour cream, you may find that the cream curdles with the spinach. This is due to the acidity of the cream and you need not worry.
If you follow the next steps and mix everything into a magic ball, everything will become creamy again.
Step Seven: The Wonder Weapon
Using the Magic Bullet or another blender or stand mixer, add all the spinach and the sour cream mixture and mix thoroughly until everything is blended to a nice green and creamy texture.
8 steps: Casting
Make sure your gnocchi keto are still warm.
If not, reheat them and put them in the dish in which you will serve them.
Pour all the creamy spinach mixture over your low-carb gnocchi.
Phase 9: Turmeric
Using turmeric powder not only adds a beautiful color to our keto gnocchi with fresh spinach, but also multiplies the health benefits.
Turmeric powder is optional and it is up to you to decide if you want to use it or not, as it is not very strong in flavor.

Freshness is freshness, and I always offer it.
But of course, if you don’t have fresh spinach, it’s no problem at all. Use frozen spinach from the supermarket.
How do you store the gnocchi keto with spinach sauce?
After preparing these perfect keto gnocchi with the fresh spinach sauce, it is best to eat them right away.
However, should you have some left over, because they are well filled, you can keep them in an airtight glass container in the refrigerator for 2-3 days.
Can you freeze the gnocchi keto?
You can certainly freeze the entire dish of Keto Gnocchi with spinach sauce.
If possible, I suggest you freeze your raw gnocchi and use them when you are ready to cook and eat your dish.
You can also make the keto spinach sauce ahead of time and freeze it separately from the gnocchi in a Mason jar.
