Easy recipe for keto potato salad

This quick and easy Keto potato salad with pickles, mayonnaise and yogurt is not only an excellent low-carb dish, it’s also completely gluten-free and incredibly delicious. Served with a side of fish or meat, this is an excellent keto side dish that everyone will enjoy.

Potato salad with mayonnaise is a regular side dish at Christmas dinner in most Central European families, right after the sauerkraut soup.

This super delicious potato-free, low-carb salad is prepared a day in advance, so all the ingredients have time to come together for an even more delicious feast.

In Slovakia, where I come from, it is very popular to serve during the winter months and on special occasions when the whole family gets together.

In Austria, however, this super popular potato salad is served in all traditional restaurants with the famous escalope.

But this potato salad without potatoes always tastes good, even at a summer barbecue. Paired with our low-carb burgers, your kids will not only love eating them, but they contain so many vegetables that no one would ever guess.  The perfect side dish for the Keto barbecue.

So I wouldn’t be myself if I didn’t include it in our recipe selections. But of course, I had to change a few things to meet our low-carb needs and replace the real potatoes with something else.

What is a low-carb substitute for potato salad?

I first made this famous low-carb potato salad about 8 years ago with cauliflower. I came to our family Christmas party where we all gathered and where we had just begun our journey to a low carbon world. At the same time, of course, a normal salad was served, so everyone could try to compare one with the other.

To my surprise, they all liked it, but they said that even though it’s tasty, you really taste the cauliflower in it. The kids didn’t like it. And that led me to stop trying for a while.

This is a keto potato salad without the cauliflower.

You can use any of these low-carb vegetables to replace potatoes:

  • Celery roots
  • Cauliflower
  • Turnip
  • Turnip
  • Daikon Radish
  • Kohlrabi
  • Radish

A few years later, I began experimenting with various other low-carb vegetables to replace potatoes and found some excellent ones.

And I’ve tried all of the above.

The two winners are kohlrabi and turnips.

 

What is the difference between turnip and rutabaga?

At first, when I was on the market, I couldn’t tell the difference, so I accidentally bought both, thinking they were the same type.

It wasn’t until I cut them off that I realized what I had bought.

They looked very similar when we saw them in the store. They are both about the same size, have half a layer of pink to purple skin.

The white part is the part you need to focus on.

Turnip versus beetroot

Turnips tend to be dirty yellow-white, while rutabagas are a beautiful, almost snow-white color.

If you cut them both, the turnip will be all yellow inside.

The beets on the other side are all white.

After doing some research before trying them, I discovered that turnips contain more carbohydrates than beets, and this is one of the main reasons I chose this product.

Turnips are also sweeter, and cut beets look more like potatoes.

 

Turnip as a substitute for potato.

After several batches, my family and I decided that kohlrabi was the best choice for this recipe. And that’s what’s left.

I also used beets in our recipe.

Turnip is a good vegetable that is very similar to radish in terms of crunch. You can eat it raw, just slice it.

As you can see, I also used green peas and carrots in our recipe, which aren’t really ketos, but used in small amounts, they don’t add too many carbs. And I really wanted to keep the real identity of this salad and not turn it into something completely different.

Another supplement I have to take.

Normally this famous potato salad is only prepared with mayonnaise as a base. But about 15 years ago, I replaced half the mayonnaise with yogurt because it tasted much lighter and we really liked it. You might like it too.

Otherwise just add mayonnaise and leave out the yogurt part.

 

How do you make a keto potato salad with kohlrabi?

STEP-BY-STEP INSTRUCTIONS FOR LOW-CARB BEET AND POTATO FORK SALAD

First step: Chard and carrot

Clean the beets thoroughly. Using a sharp knife, cut all the beets into squares the same size as you would normally do with a regular potato.

At the same time, slice the fresh carrots and put them in a bowl to cook.

 

Second step: Onions and gherkins

Cut the onion and all the cucumbers into small squares and set aside. Meanwhile, prepare the other ingredients.

 

Third step: Prepare the salad dressing

Prepare the vinaigrette in a large glass bowl. Add the yogurt with the mayonnaise and about 1/3 of the liquid from the cup you left in the pickle jar. The addition of brine adds a lot of flavor, but also makes it less filling.

Be careful and add some first, and if you need more, do it later.

Season with a pinch of salt and pepper.

Mix with a whisk to obtain a perfectly smooth dressing.

Cover and place in the refrigerator to cool slightly.

 

Fourth step: Cooking beets with carrots

Already cut beets and carrots should soften a bit. Put everything in a saucepan, add boiling water and cook for up to 15 minutes.

Don’t overcook the beets and carrots or they will become mushy. I always take a bite after about 10 minutes to taste if it’s almost done and then I decide how long to cook it.

If using fresh green peas, add them to the pan at the last minute.

 

Fifth step: Deformation and impact

Once the carrots and beets are cooking, strain them through a sieve and pour them into very cold water to slightly shock them so they immediately stop cooking. Make sure you feed them well, as beets hold much more water than potatoes.

If desired, you can dry them on a dry towel to remove as much water as possible.

 

Step 6: Put everything in a large glass bowl

In a large bowl, add all the beets, carrots, onions, pickles and green peas.

Pour all the saved sauce into the refrigerator.

 

Seventh step: Blend and season

Gently mix all the ingredients and the salad dressing with two spatulas. Blijf mengen tot de dressing gelijkmatig is verdeeld. Sometimes it takes me five minutes.

After mixing, take a spoon and taste.

 

Tips for making the best keto potato salad:

  • If you think some more salt or pepper is needed, add it.
  • If you think the dressing is too thick, add cucumber juice and stir.
  • Not acidic enough? Add cucumbers.

How do you cook beets?

There are several ways to prepare beets.

1. You can cook them whole, then peel and chop. On the other hand, it will take much longer because beets are quite large and take much longer to fully cook.

2. Cook the rutabagas in the microwave for about 6 minutes, which can also be an option if you prefer.

3. Another option is to cook a turnip. They taste great without, but for this salad I prefer them cooked.

4. Our method consists of peeling, chopping and cooking the pre-cut beets. This takes much less time and ensures that the whole beetroot cooks evenly.

5. You can also add a little turmeric for color, if you want the exact look of the potato.

My turnips taste bitter. What needs to be done?

Some beets have an outer layer, just below the skin, with a slightly bitter taste. That’s the part that’s most bitter.
If that’s the case, try turning them down a bit.

Can you make potato salad in one day?

Yeah, and it’s actually pretty good.
If you mix a fresh salad and serve it right away, the salad won’t have time to reach its full potential.

If you store this low-carb potato salad in the fridge for a few hours, the vegetables will have time to fully absorb the dressing and the actual flavor of the salad will be more intense.

That doesn’t mean you can’t maintain it right away. It tastes even better the next day.
Then make a day of it.

Also, prepare all the salad first thing in the morning.

How do you store keto potato salad?

If you plan to serve the dish at a big party the next day, store it in the large glass dish you plan to use the next day. Make sure you give it a new life. Just before serving, some vinaigrette may remain at the bottom of the bowl.

If you save our Keto potato salad in a jar for later use, you’ll have just the portion you need for a special lunch or dinner.

How long can you store Lowe’s potato salad?

Because it is a mayonnaise, I recommend that you always keep this salad in the refrigerator and no longer than 3-4 days.

Can you freeze a low-carb mayonnaise salad?

Any salad that contains mayonnaise as the base for the dressing should be stored in the refrigerator.
When you freeze this salad, the eggs, oil and mayonnaise vinegar separate, creating a watery consistency.

It is very difficult to restore the perfect texture of a mayonnaise salad after it has thawed.
That’s why it’s one of the few recipes I don’t want to freeze.

    8. Some cooking is required to soften beets and carrots. Put everything in a saucepan, add boiling water and cook for up to 15 minutes.
      If using fresh green peas, add them to the pan at the last minute.
    9. As soon as the carrots and turnips have come to the boil, pass them through a sieve and cover with very cold water, whisking lightly to stop the cooking immediately. Make sure you feed them well, as beets hold much more water than potatoes.
    10. In a large bowl, add all the beets, carrots, onions, pickles and green peas.
    11. Pour in all the dressing you kept in the fridge.
    12. Using 2 spatulas, gently mix all the ingredients and the salad dressing. Continue to mix until the dressing is evenly distributed. Sometimes it takes me five minutes.
    13. After mixing, take a spoonful if necessary, taste and season.
